Whenever I make something, and it turns out well, I’m tempted to post about it on Facebook and mention that I’m single and available. I figure that’d be a bit tasteless, though, since I’m still friends with several former romantic interests.
So, instead, I will share with you. Here’s the recipe for these banana muffins that I made the other day. I’m not going to lie: they were awesome. Make them, if you like bananas, or muffins, and you aren’t allergic to anything in them. If you are allergic to anything in them, you’re still welcome to make them, but please take precautions against swelling up and dying.
Sunny’s Banana Bread Muffins
(adapted from Sarah’s Banana Bread Muffins)
Makes 12 tasty muffins. 15 minutes-ish to prep, 30 minutes to bake, 45 minutes total.
- 1/2 cup white sugar
- 1 egg
- 1 and 1/2 cups all-purpose flour
- 1/2 cup whole-wheat flour
- 1/2 teaspoon salt
- 1/4 cup applesauce
- 1/4 cup butter (that’s half a stick) softened or melted
- 3 ripe bananas, mashed up
- 1/4 cup chopped walnuts (or more - walnuts are tasty, man)
- 1 teaspoon baking soda
- Preheat your oven to 350 degrees Fahrenheit (175 degrees centigrade, if you’re European/Canadian/a scientist/etc). Place muffin cups in your muffin tin, or grease your muffin tin with a little butter or cooking spray or whatever.
- Mix the sugar, applesauce, butter, and egg together in a medium-large-ish bowl. Add bananas and walnuts (yum), then the flour, baking soda, and salt. Stir that until it’s smooth and well-combined, but don’t go overboard. No one is going to die if it isn’t completely homogenous. Then spoon the batter into the muffin tin.
- Stick em’ in the oven and bake for about 30 minutes, or until a toothpick stuck in the center muffin comes out more-or-less clean. I’d say check at about 25 minutes, because the original recipe says 30-40 minutes, but mine were totally done at 30.
- Eat those muffins. Dang. Those are good muffins.
The only real changes to the original recipe I made were 1) cutting the sugar in half, because I find baked-good recipes too sweet in general, 2) adding a little bit of whole wheat flour, which is slightly healthier and a little heartier, and 3) replacing the 1/2 cup vegetable oil with butter and applesauce. The applesauce cuts the fat a bit and adds a little sweetness, and the butter is delicious (plus we were out of vegetable oil.)
